Standardization and production of traditional Indian milk product ‘Ujani basundi’ from Buffalo milk

Abstract
A study on the standardization of “Ujani basundi” was carried out by using Buffalo milk. Milk was standardized to 6% fat and 9% SNF. The attempts have been made to study the effect of different levels of sugar (6, 8 and 10% w/w of original milk) and rate of concentration (2.5, 3.0 and 3.5X including sugar) on sensorial and chemical quality of Ujani basundi. The results have indicated that the product prepared with 8% sugar level and 3.0X concentrated had optimum consistency, brown colour, pleasant flavour, with small flakes hence scored highest among all the treatments.

Biodiversity of molecular profile of Staphylococcus aureus isolated from bovine mastitis cases in West Algeria

Abstract
Bovine mastitis is an inflammation of the mammary gland with local and or symptoms that occasionally result in a systemic infection. This disease has a profound impact on animal welfare and milk quality, and the most costly disease affecting dairy cows. The bacteria Staphylococcus aureus is one of the most frequently isolated pathogens from both subclinical and clinical infections. This study was conducted to investigate the phenotypic and genotypic characterization of S. aureus involved in dairy cow mastitis in West Algeria. A total of 141 isolates of S. aureus isolated from quarter milk samples were collected from dairy cows. All retained S. aureus species contained gyr gene and were identified by molecular typing. The presence of resistance was evaluated in S. aureus. Staphylococci antimicrobial resistance was performed by detection of mecA gene. Several virulence factors including toxin of the Pantin Valentine leukocidin coding gene (pvl) were also investigated by polymerase chain reaction (PCR). Only one strain of S. aureus was mecA - and pvl+ gene.

A regional comparative analysis of factors affecting farmers’ decision to benefit from milk incentive premium in Turkey

Abstract
In this study, it was aimed to determine the factors affecting farmers’ decision to benefit from milk incentive premium. The study was carried out in the Northwest region of Turkey, which is considered one of the most productive milk producing region and the Northeast of Turkey, where the number of cattle is the highest. The number of survey conducted in the provinces of these two regions was determined to be 540. Based on the data obtained, the regression analysis was performed using LIMDEP statistic package program with descriptive statistical analysis and univariate (binomial) probit procedure. According to the results of the study, it was determined that the farmers in the Northwest benefited more from the milk incentive premium, produce more milk for market, have higher levels of education than that of those in the Northeast, which was average. It was also observed that they generally have more productive breeds of cattle in their farms. Considering all these results, it could be thought that, it is necessary to perform animal growing more consciously in the Northeast and thus, it is a need in this region to train the animal growers, and the support policies should be restructured by considering regional differences.

Comparative contamination of Listeria monocytogenes in traditional dairy products in Esfahan Province, Iran

Abstract
Listeria monocytogenes, a primary human pathogen, has been found in different places in the environment of dairy, and the bacterium may survive for a long time in a dairy. L. monocytogenes is a major concern for the food industry, as it can cause listeriosis in humans. Listeriosis is one of the most important infections in Europe and the United States. It may cause fever, muscle aches and gastroenteritis; but does not usually cause septicaemia in healthy non-pregnant individuals. In pregnant women, it may cause abortion or neonatal death. From June 2010 to April 2012, a total of 420 samples were collected from different places in Esfahan Province. Samples were collected and analyzed based on the International Organization for Standardization using cultural method and biochemical test. Totally, in 57 samples (13.57%) of 420 dairy product samples L. monocytogenes was isolated. Based on biochemical observation, out of 210 raw milk samples, 42 (20%) were contaminated by Listeria monocytogenes. In traditional butter samples, 9 samples were contaminated by L. monocytogenes (12.85%); in traditional cheese samples, 5 (7.14%) samples were contaminated by L. monocytogenes and in traditional curd samples, 1 sample was contaminated by L. monocytogenes (1.43%). According to our finding, using traditional dairy products is dangerous, and it must be controlled by the ministry of health organization or other related organizations.
